Winemaking notes

The Chardonnay grapes were hand-harvested in early October 2019 for a limited production. Shaped by a warm spring and challenging summer, yielding rare, concentrated fruit. Fermented in a mixture of stainless steel and French oak at cool temperatures using selected Burgundy yeast strains to enhance complexity, stone fruit, floral characters and minerality. Post fermentation there was full malolactic fermentation and extended fine lees ageing with regular batonnage to accentuate the natural weight for depth and elegance. The wine was aged in oak for a little over a year before final blending into stainless steel tanks before bottling.

At Lyme Bay, we produce the best wines made from the best fruit grown by the best growers in the best locations. We work with a group of outstanding growers with vineyards all over England who plant the right grapes for the climate they are in to get the best ripeness to allow us the best raw materials to craft outstanding wine to delight your palate.
