Sauvignon Blanc 2025

Winemaking Notes

All our Sauvignon grapes were handpicked and chilled on reception at the winery to retain as much quality as possible. We separate the free run juice and settle out the solids before fermenting at a cool temperature using yeasts designed to increase the tropical thiol aromas eg passionfruit. The wine is then aged on the fine lees before bottling in early spring to maintain the youthfulness of this variety.
