Mead is one of the oldest drinks in the world and one of the most versatile. Its natural warmth, sweetness and depth make it brilliant for cocktails. It pairs beautifully with citrus, spice, fresh herbs and fruit, and it works just as well in a warming mulled drink as it does in a light, fizzy spritz.

Below you’ll find 10 mead based St Patrick’s Day drink recipes. Some new for 2026, some returning fan favourites, to help you sip your way through the celebrations in style.
1. The Emerald Isle Fizz (new for 2026)
Light, fresh and green tinged without a drop of food colouring. This is the perfect welcome drink for a St Patrick’s Day gathering. Elderflower lifts the honey notes of the mead and the cucumber keeps everything cool and refreshing.
You’ll need: A Champagne flute or coupe glass
Ingredients:
- 3 oz Lyme Bay Traditional Mead
- 1 oz elderflower cordial
- 1 oz fresh cucumber juice (blend and strain half a cucumber)
- Splash of sparkling water
- Cucumber ribbon and mint sprig to garnish
Method:
- Combine mead, elderflower cordial and cucumber juice in a shaker with ice
- Strain into a chilled flute or coupe
- Top with a gentle splash of sparkling water
- Garnish with a long cucumber ribbon and a sprig of mint
Why it works: Cucumber brings a natural pale green hue and crisp freshness. No food colouring required.
2. Honeyed Gin Mead Cocktail (returning favourite)
A firm favourite from our 2025 St Patrick’s Day cocktails guide. Dry mead and gin are a natural pairing: the botanicals complement the honey beautifully, making this feel genuinely special rather than just festive.
You’ll need: A cocktail shaker and coupe glass
Ingredients:
- 1 oz Lyme Bay Dry Gin
- 2 oz Lyme Bay Mead
- ½ oz honey syrup
- ½ oz fresh lemon juice
Method:
- Add all ingredients to a shaker filled with ice
- Shake well for 15 seconds
- Strain into a chilled coupe glass
- Garnish with a lemon twist
3. The Sláinte Sour (new for 2026)
Sláinte, (the Irish toast meaning “health”), deserves a drink as bold and vibrant as the sentiment. This mead sour has a beautiful frothy top and a tart sweet balance that makes it dangerously drinkable. The optional green chartreuse gives it a gorgeous colour and an extra herbal kick.
You’ll need: A cocktail shaker and rocks glass
Ingredients:
- 2 oz Lyme Bay Traditional Mead
- ¾ oz fresh lemon juice
- ½ oz honey syrup
- ½ oz egg white (or aquafaba for a vegan version)
- Dash of green chartreuse (optional)
- Lemon wheel and a dash of bitters on the foam to garnish
Method:
- Dry shake all ingredients (no ice) for 10 seconds to emulsify the egg white
- Add ice and shake hard for a further 15 seconds
- Strain into a rocks glass over a large ice cube
- Garnish with a lemon wheel and a dash of bitters on the foam
4. Mulled Mead (cosy classic)
A warm, spiced mead that became a genuine hit from our 2025 guide. Mead takes to mulling even better than wine. The honey notes intensify as it warms and the spices meld into something that smells as incredible as it tastes. Perfect for a chilly March evening.
You’ll need: A small saucepan and heatproof glass or mug
Ingredients (serves 4–5):
- 1 bottle Lyme Bay Traditional Mead
- 2 cinnamon sticks
- 2 star anise
- Strip of orange peel
- 3 cardamom pods, lightly crushed
- 2 tsp honey, to taste
Method:
- Combine all ingredients in a saucepan over a very low heat
- Warm gently but do not boil, for 10–15 minutes until fragrant
- Taste and add honey if desired
- Ladle into heatproof glasses and garnish with a cinnamon stick
Tip: A small splash of Irish whiskey stirred in at the end makes this even better.
5. The Honey & Ginger Mule (new for 2026)
The mule is one of the most crowd pleasing cocktail formats ever invented. And mead makes a brilliant base for it. The honey sweetness of apple mead plays off the fiery ginger beer beautifully, and it comes together in about 30 seconds flat.
You’ll need: A copper mug or highball glass
Ingredients:
- 2 oz Lyme Bay Apple Mead
- ½ oz fresh lime juice
- 4 oz ginger beer
- Lime wheel and candied ginger to garnish
Method:
- Fill a copper mug or highball glass with ice
- Add apple mead and lime juice
- Top with ginger beer and stir gently once
- Garnish with a lime wheel and candied ginger
6. Mead Sangria (crowd pleaser)
When you’re hosting a party and want something that serves a crowd effortlessly, this is your recipe. Mead’s honey sweetness works brilliantly in sangria. The citrus and cranberry give it a gorgeous rosy-gold colour and a flavour that keeps everyone coming back for more.
You’ll need: A large pitcher
Ingredients (serves 6–8):
- 1 bottle Lyme Bay Traditional Mead
- 2 oz orange liqueur (Cointreau or similar)
- 6 oz cranberry juice
- 1 orange, sliced into rounds
- 1 lime, sliced into wheels
- A handful of green grapes
- Juice of 1 lime
- Ice
Method:
- Combine all ingredients in a large pitcher and stir well
- Refrigerate for at least 2 hours
- Serve over ice, making sure each glass gets some of the fruit
7. Apple Cinnamon Mead Toddy (warm & wintry)
March in the UK can still bite. This warm apple mead drink, (somewhere between a hot toddy and a spiced cider), is exactly what you want when the celebrations move inside and the candles come out.
You’ll need: A small saucepan and mug
Ingredients:
- 4 oz Lyme Bay Apple Mead
- 1 oz fresh lemon juice
- 1 cinnamon stick
- 1 tsp vanilla cinnamon syrup (or ½ tsp vanilla extract + ½ tsp caster sugar)
- Thin apple slice to garnish
Method:
- Warm mead gently in a small saucepan with the cinnamon stick
- Pour into a mug and stir in lemon juice and vanilla cinnamon syrup
- Garnish with a thin apple slice and the cinnamon stick
- Serve immediately
8. The Shamrock Punch (party centrepiece)
Every St Patrick’s Day party deserves a punch bowl worth talking about. This one pairs the floral sweetness of elderflower wine with the honeyed depth of mead and a big hit of fresh citrus. Easy to make in advance and brilliant for a crowd.
You’ll need: A large punch bowl
Ingredients (serves 10–12):
- 1 bottle Lyme Bay Traditional Mead
- 1 bottle Lyme Bay Elderflower Country Fruit Wine
- 4 oz honey syrup
- 1 green apple, thinly sliced
- 1 pear, thinly sliced
- Juice of 2 lemons
- 500ml sparkling water
- Green grapes and mint to garnish
Method:
- Combine mead, elderflower wine, honey syrup and lemon juice in the punch bowl and stir well
- Refrigerate for at least 1 hour before serving
- Add sparkling water and ice just before guests arrive
- Float apple slices, pear and grapes on top
9. Cherry Mead Dark & Stormy (new for 2026)
Swapping out rum for black cherry mead gives this classic cocktail a completely new dimension. Rich, fruity and with a real ginger kick, this is the one to make when you want something a bit more dramatic on the drinks table.
You’ll need: A highball or rocks glass
Ingredients:
- 2 oz Lyme Bay Black Cherry Mead
- ½ oz fresh lime juice
- 4 oz ginger beer
- 2 dashes Angostura bitters
- Lime wheel and fresh cherries to garnish
Method:
- Fill a highball glass with ice
- Add cherry mead, lime juice and bitters
- Top with ginger beer. Don’t stir, let the layers settle naturally
- Garnish with a lime wheel and a few fresh cherries
10. The Spiced Mead Toddy (nightcap perfection)
This is the drink to end on. Warm, honeyed and gently spiced with a generous splash of Irish whiskey.
You’ll need: A small saucepan and mug
Ingredients:
- 5 oz Lyme Bay Traditional Mead
- 1 oz Irish whiskey
- 1 oz fresh lemon juice
- 1 cinnamon stick
- ½ oz honey
- 2 cloves
Method:
- Warm all ingredients gently together in a saucepan. Do not boil
- Pour through a fine strainer into a mug
- Garnish with a cinnamon stick
- Sip slowly
