Blanc De Noirs More Information
Blanc de Noir sparkling wines are white wines made from just black grapes, and our Blanc de Noirs is made from 100% Pinot Noir grapes. Blanc de Noirs tend to be richer with more red fruits than the Classic Cuvée and Blanc de Blancs.
WINEMAKING NOTES
The Pinot Noir was handpicked on the 2nd of October 2014, which is relatively early for English Pinot Noir but 2014 was an incredibly warm and dry growing season. The grapes were transported to the winery in small picking crates to ensure that they stayed intact until being transferred directly into our grape press by hand. After a very gentle pressing, only the finest cut was transferred to tank for the Blanc de Noir primary fermentation after a natural, cold settle. Malolactic fermentation was completed sequentially and the wine was bottled the following spring for secondary fermentation. After a minimum of two years on lees the wine was riddled and the yeast disgorged before being allowed some cork time before release.
APPEARANCE
Light copper hue with fine and consistent bubbles.
NOSE: Rich and earthy with forward strawberry and cherry notes.
PALATE: The delicious richness is offset by a crisp acidity and a light toast finish.
