WINEMAKING NOTES
The Chardonnay grapes were hand-harvested between the 3rd and 8th of October 2022 after a beautifully hot and dry summer. Fermented in a mixture of stainless steel and oak at cool temperatures using selected Burgundy yeast strains to enhance complexity, stone fruit, floral characters and minerality. Post fermentation there was full malolactic fermentation and extended fine lees ageing with regular bâtonnage to accentuate the natural weight. The wine was aged in oak for a little over a year before final blending.
TASTING: Pale gold in colour
NOSE: A classic nose of custard apple, clementine and light honeysuckle
PALATE: A rich style of Chardonnay with orchard fruits, balanced with a creamy palate and subtle spice. A crisp and complex framework makes this wine an excellent match with food, and it also has the structure to support extended ageing.
STYLE: Elegant, dry, lightly oaked chardonnay
