WINEMAKING NOTES
This beautiful sparkling wine is made from ripe Chardonnay sparkling wine clones & required no chaptalisation due to a good growing season. The 2016 vintage was defined by an incredibly warm and dry autumn, which allowed grapes to be hand- picked at optimal ripeness. The base wine went through 100% malolactic fermentation and a small proportion then was aged in old oak to allow bâtonnage, creating a creamy weight to the base wine prior to tirage.
The wine is stored for 45 months on the lees to promote an autolytic character with notes of brioche, almond and honey adding depth.
APPEARANCE: Delicate fine bubbles, light golden in colour
NOSE: Underlying citrus and tropical fruit notes are balanced with notes of honey, almond and toasted brioche
PALATE: Complex structure with chardonnay fruit and green apple notes blending with the lees-aged character to give a wine with great depth, rounded notes and a lingering finish
